Of the nine varieties of saimin being offered, my companion and I ended up ordering the large regular saimin and the large kim chee saimin.  As we waited, chopsticks, spoons, napkins and glasses of water were brought to our table and set up.  Since I ordered the regular saimin, a dish of Chinese mustard was also brought.  Below is a picture of the condiments that are at each table when the customer first arrives.

What really pleased me about waiting was the type of chopsticks they gave us.  While they were disposable chopsticks, they were higher quality type of chopsticks, not the break-and-shave variety. 

Also, the glasses of water were large and cold, with a half a wedge of lemon for garnish.  Ordinarily I would've thought the lemon had been added only for color, but I was pleased to discover that it not only added color, but also taste.  It tasted as if lemon juice was added to a pitcher of water.  While the flavor was not as lemony as something like lemonade, it had just the right amount of lemon to leave my palate clean and refreshed after every sip.
